Author(s) and Guest(s)

Norman Van Aken

Van Aken's memoir No Experience Necessary: The Culinary Odyssey of Chef Norman Van Aken (Taylor Trade Publishing; $24.95) spans twenty-plus years and nearly as many jobs—including the fateful job advertised in the local paper for a short-order cook: “no experience necessary.” The story takes readers from the graveyard shift at an all-night barbeque joint to a James Beard award finalist for best restaurant in America. Van Aken, considered one of the founders of New America cuisine, is the Chef and Director of Restaurants at The Miami Culinary Institute as well as the Chef-Owner of Norman's at the Ritz-Carlton, Grande Lake, Orlando.
